For a snack or side dish, this dip goes wonderfully with a variety of seasonal veggies. In addition to carrots, cucumber, broccoli, and cherry tomatoes, try dipping kohlrabi, spring turnips, peas (de-stringed and ends trimmed, if desired), or even apples! (Hint: you can also use your CSA garlic when it becomes available.)
Easy Veggie Dip
- 1 c mayo
- 2 T Parmesan cheese grated
- 1 clove garlic or 1 garlic scape minced
- salt and pepper to taste
- dried or fresh herbs to taste
Combine all ingredients and enjoy!
