While you can make this recipe with spinach – why not mix it up?! The farm crew threw together this dip using baby kale, carrot, and broccoli. Try it with any greens and other veggies you have on hand!
- 2 tbsp vegetable oil
- 4 cups finely chopped spinach, broccoli, and grated carrot or spinach or other veggies
- kosher salt
- 1/2 cup full-fat cream cheese
- 1/2 cup full-fat sour cream
- 1/4 cup minced red onion
- 1/4 cup minced parsley
- 1 tsp finely minced red chili pepper or 1 tbsp finely minced red bell pepper + 1/4 tsp crushed red chili flakes
Heat oil in a large saucepan over medium heat.
Add vegetables and 1/2 tsp kosher salt and cook until wilted, about 2 minutes.
Transfer veggies to a large bowl. Beat in cream cheese, sour cream, red onion, parsley, red pepper and 1/8 tsp salt. Taste and add more salt as desired.
