This recipe from CSA member Susan is perfect for summer weeks when the gardens are producing a bountiful variety of veggies.
Garden Vegetable Soup
- 2/3 cup carrots sliced
- 1/2 cup onions diced
- 2 cloves garlic minced
- 3 cups broth beef, chicken, or vegetable
- 1 1/2 cups green cabbage diced
- 1/2 cup green beans chopped
- 1 tbsp tomato paste
- 1/2 tsp basil dried or fresh
- 1/4 tsp oregano
- 1/4 tsp salt
- 1/2 cup zucchini chopped
In a large saucepan sauté onions, carrots, and garlic till soft.
Add broth, cabbage, beans, tomato paste and herbs.
Bring to boil, decrease heat and simmer 15 minutes.
Stir in zucchini and heat 3-4 minutes, then serve!
