This fresh salad is a quick way to prepare fennel. Customize by adding your favourite herbs, or other raw veggies.
Shaved Fennel Salad
- 1 bulb fennel shaved paper thin with a mandoline or meat slicer (or carefully sliced with a knife!)
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1-2 Tbsp fresh herbs finely chopped, e.g. basil, thyme or parsley
- 2 Tbsp shaved Parmesan cheese
- salt and pepper to taste
Mix all ingredients together and serve!
Serves 2-3 people.
