Roasted Red Pepper and Maple BBQ Sauce

Roasted Red Pepper and Maple BBQ Sauce


  • 1 cup red peppers roasted
  • 1/3 cup pure maple syrup
  • 1 tablespoon cider vinegar
  • 1 teaspoon canned chipotle chiles in adobo sauce chopped, plus 1 teaspoon adobo sauce; or 1/2 teaspoon cayenne
  • 1/2 teaspoon salt


  1. Purée all ingredients in a blender until smooth.

  2. Simmer in a small heavy saucepan, stirring occasionally, until reduced to about 3/4 cup, 8 to 10 minutes.

  3. Cool to room temperature. Serve with shrimp or chicken.
