If you’re roasting your peppers, here’s a creative way to integrate them into a meal. This recipe is adapted from Epicurious.com.
Roasted Red Pepper and Maple BBQ Sauce
- 1 cup red peppers roasted
- 1/3 cup pure maple syrup
- 1 tablespoon cider vinegar
- 1 teaspoon canned chipotle chiles in adobo sauce chopped, plus 1 teaspoon adobo sauce; or 1/2 teaspoon cayenne
- 1/2 teaspoon salt
Purée all ingredients in a blender until smooth.
Simmer in a small heavy saucepan, stirring occasionally, until reduced to about 3/4 cup, 8 to 10 minutes.
Cool to room temperature. Serve with shrimp or chicken.
