Here’s a simple greens recipe from Rebecca, who worked on the farm in 2007. Try adding green onion to taste, shredded carrot for colour, and fresh peas for fun!
Rice, bean and green salad
Ingredients
- 3 c cooked rice
- 2 c cooked adzuki beans or other beans
- 2-3 c cooking greens chopped and sauteed/steamed. Try kale, turnip or beet tops, swiss chard, spinach etc
Dressing
- ¼ c olive oil
- 1 T sesame oil
- 1-2 T fresh minced ginger
- ¼ c rice vinegar
- 2 T soy sauce or tamari
- 1 t ground coriander
- 1 T minced garlic or garlic scapes
Instructions

Combine rice, beans and greens in a bowl and toss with dressing.
