Vibrant Tomato Salad

This recipe for a simple solution to an abundance of summer tomatoes was contributed by CSA member Jane, who says, “This is easily scaled to be a much bigger salad – the measurements I’ve listed below are for one portion, but can be easily increased to be enjoyed by several people, or over several days.”

Vibrant Tomato Salad


  • 6-8 Sun Gold tomatoes sliced in half (can also use smaller red tomatoes)
  • 1/3 cucumber sliced in 1/2 inch quarters
  • 1/2 pepper sliced
  • 1/4 cup feta or olives, tofu, or completely omit
  • 1 tbsp olive oil
  • Fresh cracked pepper
  • Pinch of salt
  • 6 mint leaves cut in ribbons


  1. Combine all ingredients in a bowl.
  2. Eat immediately, or store in the fridge up to 3 days.

Recipe Notes

I like to add fresh mint each time I serve this - it creates a great balance of acidic, sweet, salt, oily, and pungent.
