This recipe for a simple solution to an abundance of summer tomatoes was contributed by CSA member Jane, who says, “This is easily scaled to be a much bigger salad – the measurements I’ve listed below are for one portion, but can be easily increased to be enjoyed by several people, or over several days.”
Vibrant Tomato Salad
- 6-8 Sun Gold tomatoes sliced in half (can also use smaller red tomatoes)
- 1/3 cucumber sliced in 1/2 inch quarters
- 1/2 pepper sliced
- 1/4 cup feta or olives, tofu, or completely omit
- 1 tbsp olive oil
- Fresh cracked pepper
- Pinch of salt
- 6 mint leaves cut in ribbons
Combine all ingredients in a bowl.
Eat immediately, or store in the fridge up to 3 days.
I like to add fresh mint each time I serve this - it creates a great balance of acidic, sweet, salt, oily, and pungent.
