Summer Bruschetta

Marie shared this quick bruschetta recipe with CSA members as a healthy summer cooking tip. She suggests serving it on bread as an appetizer or snack. For a gluten-free version she suggests gluten-free crackers or plantain chips.

Summer Bruschetta


  • 4 ripe tomatoes or 4 cups cherry tomatoes chopped
  • 1 clove garlic minced
  • Juice of 1/2 a lemon
  • 2 tbsp white onion chopped
  • ½ cup fresh basil leaves chopped
  • ½ tsp sea salt
  • 3 tbsp extra-virgin olive oil


  1. Combine all the chopped ingredients in a bowl and mix well.
  2. Let marinate for at least 10 minutes.
  3. Serve and enjoy!
