Marie shared this quick bruschetta recipe with CSA members as a healthy summer cooking tip. She suggests serving it on bread as an appetizer or snack. For a gluten-free version she suggests gluten-free crackers or plantain chips.
- 4 ripe tomatoes or 4 cups cherry tomatoes chopped
- 1 clove garlic minced
- Juice of 1/2 a lemon
- 2 tbsp white onion chopped
- ½ cup fresh basil leaves chopped
- ½ tsp sea salt
- 3 tbsp extra-virgin olive oil
Combine all the chopped ingredients in a bowl and mix well.
Let marinate for at least 10 minutes.
Serve and enjoy!
