This recipe was shared by Marie – a CSA member, and past RR farm worker! It’s easily made with whatever veg you have on hand with ground beef or beans, cheese, and served up with sour cream and salsa. Marie described her process as:

“I cook up beef with garlic and onions, add chilli powder and cumin, cook it down a bit; then add red peppers, kale, oregano and basil and give it one last minute. I sprinkle this across a tray of tortilla chips and add sliced cherry tomatoes, jalapeños, and cheese. Bake at 400 for 5 minutes or so, broil for one minute, and call it heaven.”
