When the cucumbers are bursting from the fields, a classic way to make them shine is in a Greek salad:
Greek Salad
Ingredients
- 2 cucumbers peeled and chopped
- 3 to tomatoes chopped
- 2 green onions diced
- ¼ c olive oil
- 4 t lemon juice
- 1-½ tsp oregano
- Salt and pepper to taste
- 1 c feta cheese
- 6 black olives halved
Instructions

Combine cucumbers, tomatoes and green onions in a bowl. Sprinkle oil, lemon juice, oregano and salt and pepper over the veggies. Toss. Sprinkle on the cheese and olives and serve.
