Greek Salad

When the cucumbers are bursting from the fields, a classic way to make them shine is in a Greek salad:

Greek Salad


  • 2 cucumbers peeled and chopped
  • 3 to tomatoes chopped
  • 2 green onions diced
  • ¼ c olive oil
  • 4 t lemon juice
  • 1-½ tsp oregano
  • Salt and pepper to taste
  • 1 c feta cheese
  • 6 black olives halved


  1. Combine cucumbers, tomatoes and green onions in a bowl. Sprinkle oil, lemon juice, oregano and salt and pepper over the veggies. Toss. Sprinkle on the cheese and olives and serve.
