Delicata Squash Rings

Farmer Emily likes to cook delicata squash by cutting them into rings and roasting them. To keep it simple, just coat in olive oil and bake; this recipe suggests adding herbs and shallot. The process is described in this video.

Delicata Squash Rings


  • 2-3 Delicata squash
  • Olive oil
  • Thyme or other herbs
  • Ground shallot (optional)
  • Salt to taste
  • Pepper to taste


  1. Cut off ends of squash.
  2. Using a long knife, cut out the seeds from the middle of the squash.

  3. Slice squash into 1/2 inch rings.
  4. Toss rings in olive oil, salt, pepper, herbs, and ground shallot if using. Transfer to baking pan. Roast at 400 degrees for 20 minutes and serve.
