WLP’s Delicious Green Pancakes/Waffles!

One of our good friends sent this recipe in and it is a great success. We made ours on a waffle iron, but they would fry up as pancakes perfectly as well. What a great way to cram some spring greens into an easily served, stored, and frozen snack.

So far, we’ve tried these with yoghurt and salsa, ranch dressing, and chutney, but we have heard reports that they also work with sweet toppings?!? Remarkable. We used a whole bunch of mustard greens so we were expecting a bit of a savoury spice, and it’s there, but the nuttiness of the corn meal levels it out nicely and I can totally see it working with honey or jam or maple syrup. WLP’s Delicious Green Pancakes/Waffles!

Ingredients

  • 1/3 cup brown rice flour (we used white all purpose flour and replaced the cornstarch)
  • 1/3 cup cornstarch (if you're using wheat flour, you can replace this half and half with more cornmeal and more ap flour)
  • 1/3 cup cornmeal
  • 1/3 cup ground sunflower seeds
  • 3/4 tsp baking powder
  • 3/4 tsp baking
  • 1/4 tsp salt
  • one cup milk
  • 2 cups of roughly chopped turnip greens could use spinach or kale or lettuce or perhaps even spicier greens too
  • 2 eggs could easily use a vegan substitute like flax egg

Instructions

In a bowl, mix…

  1. 1/3 cup brown rice flour
  2. 1/3 cup cornstarch
  3. 1/3 cup cornmeal
  4. 1/3 cup ground sunflower seeds
  5. 3/4 tsp baking powder
  6. 3/4 tsp baking
  7. 1/4 tsp salt

In a blender, blend til smooth…

  1. -one cup milk (i used almond)
  2. -2 cups of roughly chopped turnip greens (could use spinach or kale or lettuce or perhaps even spicier greens too)
  3. -I also added 1 cup of fried up mushrooms, zucchini, onions and garlic (just cause I had on hand–recipe will work well without them 🙂
  4. -2 eggs (added these at the very end of the blending, could easily use a vegan substitute)

Add liquid to dry bowl

  1. Add the contents of the blender to the bowl and stir gently til just incorporated

Fry up on griddle, cast iron pan, or in a waffle maker!

  1. Used a bit of safflower oil to grease the pan and then made the pancakes as usual

Serve with savoury or sweet topping

  1. -ranch dressing
  2. -apple sauce
  3. -maple syrup
  4. -chutney
  5. -etc.!
