Simple Sugar Snap Peas

This recipe, originally from allrecipes, was contributed by past Root Radical crew member Josh. Instead of shallots, Josh used a garlic scape olive oil that he blended in his food processor.

Sugar snap peas can be substituted for snow peas; just make sure to check them frequently to make sure they don’t burn!

Simple Sugar Snap Peas

Ingredients

  • 1/2 lb sugar snap peas
  • 1 Tbsp olive oil
  • 1 Tbsp shallots chopped
  • 1 tsp thyme chopped
  • salt to taste

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Spread sugar snap peas in a single layer on a medium baking sheet, and brush with olive oil. Sprinkle with shallots, thyme, and kosher salt.
  3. Bake 6 to 8 minutes in the preheated oven, until tender but firm.
