Laura’s Cabbage Soup

A simple, classic way to prepare cabbage: soup! This recipe was contributed by Laura, a former summer student.

Laura's Cabbage Soup


  • 1 small cabbage finely chopped in thin strips
  • 2 potatoes in small cubes
  • Salt and pepper
  • 7 cups homemade chicken broth
  • 2 oz bacon chopped
  • Parsley


  1. Cook bacon until crisp.

  2. Add cabbage and potatoes and cook 4-5 minutes on high heat.

  3. Add broth and simmer 15 minutes.

  4. Add salt, pepper, and parsley to taste.

Recipe Notes

Proportions are variable. Laura made her soup with 4 cups of broth and 1 potato, but still a full cabbage, which made it "fuller". The recipe above makes a much thinner soup.
