A simple, classic way to prepare cabbage: soup! This recipe was contributed by Laura, a former summer student.
Laura's Cabbage Soup
- 1 small cabbage finely chopped in thin strips
- 2 potatoes in small cubes
- Salt and pepper
- 7 cups homemade chicken broth
- 2 oz bacon chopped
Cook bacon until crisp.
Add cabbage and potatoes and cook 4-5 minutes on high heat.
Add broth and simmer 15 minutes.
Add salt, pepper, and parsley to taste.
Proportions are variable. Laura made her soup with 4 cups of broth and 1 potato, but still a full cabbage, which made it "fuller". The recipe above makes a much thinner soup.
