This idea was shared by CSA member Angela! It looks absolutely delicious, and is a great way to enjoy bok choy fresh instead of cooked.
Favourite Baby Bok Choy Salad
The dressing comes from Epicure.
- 2-3 baby bok choy, sliced
- 1-2 green onions, finely sliced
- handful chow mein noodles, raw, and crunched up
- handful sliced almonds
- 2 Tbsp Epicure sesame ginger spice mix if you don't have this, use 2 tsp sesame seeds and 1 tsp grated ginger
- 3 Tbsp soy sauce
- 1/3 cup neutral oil
- 1/2 cup rice vinegar
Toss salad ingredients together in a bowl.
Mix together the dressing in a jar, and pour desired amount over the salad.
Toss the salad, serve, and enjoy!
