CSA member Kathleen shared this recipe for a simple, tasty way to prepare green beans as a side dish. She got the recipe from the No Meat Athlete Cookbook.
Tahini Green Beans
- 1 lb. green beans washed & trimmed
- 2 tbsp. tahini
- 1 clover garlic minced
- Grated zest & juice of 1 lemon
- Black pepper to taste
- Salt to taste
- 1 tsp. toasted sesame seeds optional
Steam beans, reserving cooking water.
Mix rest of ingredients except sesame seeds & use cooking water to thin the sauce as desired.
Toss the beans with the sauce (or dip them like fries!). Serve warm or at room temperature. Garnish with sesame seeds if using.
