In my opinion, tasty eggplant preparation requires two things: time, and some kind of oil. Time is to soften texture and oil is to enhance the flavour.
There are a few recipes in the eggplant tag, but here is a simple tip that I like to use:
- Eggplant chopped into bite sized pieces
- Olive oil
- Salt to taste
- Pepper to taste
- Garlic chopped
Toss eggplant with oil, salt and pepper and garlic.
Roast in the oven at about 350 degrees F until tender (usually about 30-45 minutes).
A little bit of parmesan cheese added when serving is a nice touch.
