The recipe from Simply in Season is my favourite meat loaf recipe, featuring a good amount of fresh parsley along with a range of warming spices.
Middle Eastern Meat Loaf
Ingredients
- 1 medium onion chopped
- ½ cup fresh parsley chopped, can include stems
- 1 lb ground beef or mutton
- 1 tsp ground cinnamon
- 1 tsp salt or to taste
- ½ tsp ground nutmeg
- ½ tsp ground allspice
- ½ tsp ground coriander
- ½ tsp pepper
Instructions

Place onion and parsley in food processor or put through meat grinder.

Add other ingredients and process together, in batches if necessary.

Meat is ready to cook immediately, but chilling mixture in refrigerator for several hours will improve flavour. When ready to cook, press meat mixture into bottom of 9×9 inch pan and bake at 350F for an hour.

Allow to cool 5 minutes, and serve on a bed of chopped parsley.
