Crew member Barb created the following fabulous tzatziki which replaces the traditional cucumber with kohlrabi. I wonder what other veggies would work in this recipe…!
Barb writes, “I used Liberte Mediterranean Yogourt (10% baby!) but if you choose to use a lighter yogourt you will need to strain it in a cheesecloth for an hour or so to remove the liquid.”
Kohlrabi Tzatziki
Ingredients
- one part grated kohlrabi
- two parts yogourt
- lemon juice
- lots of garlic
- sea salt to taste
- black pepper to taste
Instructions

Combine all ingredients!
Recipe Notes
Garnish with chopped parsley if you have it. Serve with pita, salad greens, and carrot sticks. On a cool day, toast pita (lightly brushed with olive oil) in the oven.
