Garlic Scape Frittata

Garlic scapes are essentially the flowers of the garlic plant, snapped off the plant before they open. Cooked, they retain a mild garlic flavour and resemble asparagus in texture. This recipe from Aric makes a quick, flavorful breakfast or light meal.

Garlic Scape Frittata

Ingredients

  • 1 ½ cups garlic scapes chopped
  • ½ cup onions or green onions chopped
  • 2 tbs olive oil
  • ¼ cup hot water
  • 4 large eggs
  • salt and pepper to taste

Instructions

  1. Saute chopped garlic scapes and scallions in oil.

  2. Add the hot water and a pinch of salt and cook scapes and scallions for about five minutes more, until tender.

  3. Beat the eggs with salt and pepper.

  4. Add remaining oil to skillet. When it is hot, spread the greens evenly, and then add the eggs.

  5. Cook and cover at medium-low heat until the top is set.

  6. Cut into wedges and serve hot or cold.
