This recipe makes a wonderful side salad. Please note that the recipe makes a large amount of salad dressing; you should have plenty left over for future salads!
Bok choy salad with sweet curry dressing
- 1 head bok choy
- 2 spring turnips
- 1 apple
- ¼ c rice wine vinegar
- ½ c olive oil
- 3 T honey
- 1 t curry powder
- 1 clove garlic or 1 garlic scape minced
- salt and pepper to taste
Chop bok choy, spring turnip, and apple into bite-sized pieces. Mix those three ingredients together in a bowl.
Combine dressing ingredients in a jar and shake vigorously. Add dressing, to taste, and toss salad a few minutes before serving.
