Apple Kohlrabi Salad and Green Onion and Ham Roll-Ups

A nice blend of the fancy Nicoise adjacent and the proletarian roll up for your oven/stove free picnic preparations this week!

We started with a recipe based on this NYT recipe, but without the unseasonable brussels sprouts and WITH some delicious massaged baby kale. Then we wanted a little side snack so we made these very simple and delicious roll ups which you’ll see on toothpicks on the side there. They are pretty basic so they don’t need a whole to do. But I’ll tell you what we did below this more official recipe!

Apple Kohlrabi Salad

Ingredients

  • FOR THE DRESSING
  • 1 teaspoon minced green onion optional
  • ¼ cup apple cider vinegar
  • 1 teaspoon chile flakes pulverized in a mortar
  • 2 tablespoons whole grain mustard
  • 1 tablespoon honey
  • 2-3 walnuts pulverized with chile flakes
  • 1 tablespoon extra-virgin olive oil
  • FOR THE SALAD
  • 2-3 Honeycrisp or other crisp tart apples peeled, cored and in ½-inch dice
  • 2 kohlrabi bulbs peeled, in ¼-inch dice
  • 1/2 bag baby kale roughly chopped and massaged with oil
  • cup shaved Parmigiano-Reggiano
  • 1 cup walnuts
  • 1 tablespoon lemon juice
  • Salt and ground black pepper
  • some ham or proscuitto if you're into it

Instructions

  1. Make the dressing: Combine green onion and vinegar in a small bowl, add pulverized chile flakes and walnuts and beat in mustard and honey. Beat in olive oil. Set aside.

  2. Wash and roughly chop the kale and massage thoroughly with a bit of olive oil.

    Peel and dice the apples and kohlrabis.

  3. Make the salad: In a large bowl, combine apples and kohlrabi and mix with half the dressing. Fold in massaged kale, Parmigiano-Reggiano, walnuts and lemon juice. Add remaining dressing and mix. Season to taste with salt and pepper. Add ham to each serving if you're into it!

To make the roll ups – lie out a soft tortilla or wrap, spread thinly with cream cheese, generously sprinkle chopped green onion evenly over the cheese, and then lay down some lunch meat of your choosing. Roll up the wrap tightly and chop into rounds. V cute, v elementary school lunch snack vibes.
