Chili Roasted Baby Kale with Goat Cheese

Chili Roasted Baby Kale with Goat Cheese


  • 2 bags baby kale
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Pinch red chili flakes
  • 1/2 cup crumbled goat cheese
  • 1/4 cup toasted pumpkin seeds


  1. Preheat oven to 360F.
  2. Place the kale in an oven proof dish and pour over the oil, salt, pepper and chili.
  3. Use your hands and massage the oil and spices into the baby kale.
  4. Roast for about 15 minutes, they should be crispy on the outside and tender on the inside.
  5. Place in a bowl and add goat cheese and pumpkin seeds.
