Garden Vegetable Soup

Ingredients

  • 2/3 cup carrots sliced
  • 1/2 cup onions diced
  • 2 cloves garlic minced
  • 3 cups broth beef, chicken, or vegetable
  • 1 1/2 cups green cabbage diced
  • 1/2 cup green beans chopped
  • 1 tbsp tomato paste
  • 1/2 tsp basil dried or fresh
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • 1/2 cup zucchini chopped

Instructions

  1. In a large saucepan sauté onions, carrots, and garlic till soft.
  2. Add broth, cabbage, beans, tomato paste and herbs.
  3. Bring to boil, decrease heat and simmer 15 minutes.
  4. Stir in zucchini and heat 3-4 minutes, then serve!
