Garden Vegetable Soup
Ingredients

tablespoon
cooking oil
3
cups
chopped or sliced mixed vegetables
½
cup
onion
green onion or leeks, diced
2
cloves
garlic
minced
3
cups
broth
beef, chicken or vegetable or water
1
tablespoon
tomato paste
¾
teaspoon
dried herbs or 1 Tbsp fresh herbs
basil, cilantro, dill, oregano, thyme, sage or rosemary
¼
teaspoon
salt
More fresh herbs to taste
(optional)
Instructions
Lightly coat the pan with cooking oil.
Sauté any hard vegetables, onions or leeks and garlic over low heat until softened, about 5 minutes.
Add broth, any medium firm vegetables, tomato paste and simmer, covered about 15 minutes or until beans are tender.
Stir in any tender vegetables and heat 3-4 minutes.
Serve hot.
