This vegetable-based “pasta” recipe from CSA member Aza Muppett is made entirely from scratch with a mix of high-summer veggies: zucchini, tomatoes, and of course, lots of basil!



Zucchini Pesto “Pasta”

Ingredients
- 1 medium zucchini spiralized or cut into matchsticks
- 1 batch fresh pesto see instructions
- 1 handful cherry tomatoes or other tomatoes, diced
- 1-2 cloves garlic
- 1 handful feta cheese
Instructions

Prepare the zucchini noodles by running your zucchini through a spiralizer. If you don't have a spiralizer, you can also cut the zucchini into matchsticks, or use a mandolin to make thin slices.

Prepare your pesto (use this recipe for a classic basil pesto).

Slice your cherry tomatoes in half; if using other tomatoes, cut into cubes.

Thinly chop or grate garlic.

Cut or crumble feta cheese.

Combine vegetables, pesto, and feta in a bowl and toss thoroughly. Plate and enjoy.
