Anytime Hash

Ingredients

  • 1-2 tbsp butter and/or oil
  • 3-4 big potatoes diced into very small cubes
  • 1.5 hearty kohlrabis peeled and diced into very small cubes
  • some basil fresh or dried
  • some paprika and red pepper flakes to taste
  • some salt to taste
  • 1 bag kale or arugula diced and chopped very small
  • 1 cup oven roasted cherry tomatoes (we threw ours in from frozen)
  • 1/2 cup frozen corn

Optional Add Ons

  • 1 chunk chorizo diced into very small cubes
  • 1 chunk goat cheese sprinkled over the top
  • 1 baguette yum
  • 1-2 eggs

Instructions

  1. Heat the butter/oil until melty and just about to brown, then turn the heat down

  2. Add the diced potatoes and kohlrabi, and get them all stirred up and coated.

  3. Add salt and pepper and paprika and red pepper flakes and basil (if dried) (add basil later if fresh!) Add chorizo if using!

  4. Shuffle regularly and cook until potatoes are just about ready. (By which we mean, almost caramelized around the edges)

  5. Add the chopped arugula or kale, then the tomatoes and corn (staged so they fit in the pan more than anything) and cook until everything is bright, and thawed if need be.

  6. If you're adding a fried egg, part the hash in the middle and crack the eggs into the gap!

  7. Sprinkle the goat cheese over top and serve with baguette!
