Rice, bean and green salad

Ingredients

  • 3 c cooked rice
  • 2 c cooked adzuki beans or other beans
  • 2-3 c cooking greens chopped and sauteed/steamed. Try kale, turnip or beet tops, swiss chard, spinach etc

Dressing

  • ¼ c olive oil
  • 1 T sesame oil
  • 1-2 T fresh minced ginger
  • ¼ c rice vinegar
  • 2 T soy sauce or tamari
  • 1 t ground coriander
  • 1 T minced garlic or garlic scapes

Instructions

  1. Combine rice, beans and greens in a bowl and toss with dressing.
