preheat the oven to 400, and lay some parchment on a cookie tray
finely slice the potatoes - aim for about a sixteenth of an inch. pat them dry with a clean cloth.
finely dice the cilantro.
put the oil, cilantro, lime juice, and salt in a bowl and toss the potatoes in there.
lay them out flat on the parchment paper and bake for 10-15 minutes, then flip and bake for 7-10 - keep a close eye on them and remove any that look crispy as you go.
let cool a couple minutes and whip together the dip!
