Herbed Yoghurt Dressing

This is a light and refreshing salad dressing that is both bright and creamy. I love using this on roasted veg salads, or grain bowls.

Ingredients

  • 1/2 cup thick yoghurt (greek, balkan, skyr)
  • 2 Tbsp olive oil
  • 1-2 Tbsp lemon juice
  • 1/4 tsp dijon mustard
  • 1/4 cup fresh herbs pick your faves! I love this with cilantro or dill
  • 1/4 tsp salt or to taste
  • water to thin as needed

Instructions

  1. In a blender or food processor, whiz together the olive oil, lemon juice, dijon mustard, salt, and fresh herb(s) of your choosing. Pour this mixture into a bowl and gently fold in the yoghurt, being sure to fully incorporate. Taste and adjust seasoning as needed.
