Chilled Cucumber Yogurt Soup
Ingredients
4
cucumbers
750
mL
plain yogurt
1
cup
fresh dill
chopped or 1-2 tbsp dill seed
2
cloves
garlic
minced
2
teaspoon
salt
1
teaspoon
pepper
Green onion and smoked salmon
chopped (optional)
Instructions
Peel cucumbers and cut into chunks.
Place in food processor and process until pureed.
Transfer mixture to large bowl.
Add yogurt, dill, garlic and seasoning; stir until blended.
Chill until served.
If desired, garnish with chopped green onion or smoked salmon.
