Here’s a quick cucumber salad recipe for when this veggie is abundant. Peel off the firm outer skin and use your favourite summer herbs.
Sliced Cucumbers with Scallions, Yogurt and Basil.
- 1 cucumber peeled and thinly sliced
- ¼ t salt
- ¼ cup sour cream
- ¼ yogurt
- 2 T scallions
- 2 t lemon juice
- 1 T fresh basil chopped
- ¼ t sugar or other sweetener
- Fresh ground pepper to taste
Place cucumber slices in a colander and sprinkle with salt. Toss and let stand for 30-40 minutes. Rinse under cold water and pat dry.
Combine remaining ingredients in a bowl and mix well.
Stir in cucumber and season with pepper to taste.
