It’s too hot to cook and I’ve got a fridge full of beautiful greens so we’re eating a LOT of salads over here. However, I started getting a little tired of my typical olive oil-balsamic vinegar-honey-mustard-type dressings, so I dug through my fridge and tried something new!
It turned out pretty well, so I thought I’d share it on the blog. A good dressing can liven up even a super simple salad. My daily usual has become a seasonally delicious combination of lettuce (a mix of head and mixed greens), cucumber and pitted cherries. This dressing is the…uh…cherry? on top. Of the other cherries.

Scape Sesame Salad Dressing
Ingredients
- 1/2 cup plain greek yogurt
- 1/2 cup tahini
- 1/4 cup goat cheese
- 2 tbsp olive oil
- 1 tsp apple cider vinegar
- 2-3 garlic scapes
- water
- salad of choice
Instructions

Remove woody part of the scapes, and then cut into small pieces.

Add the yogurt, tahini, goat cheese, olive oil and apple cider vinegar to a food processor or magic bullet. Blend to mix well. Add the scapes and blend again. Add water a tbsp at a time and mix until you achieve your desired consistency.

Serve immediately over your favourite salad, or store in the fridge! I'm finding it thickens in the fridge, so I just add more water and mix when I want to use it again. Enjoy!
